Grilled Lemon-Jalapeno Chicken
Makes 4 servings.

Ingredients

1/2 - cup fresh lemon juice
5 - garlic cloves, minced
1 - can (4 ounces) diced jalapeno chilies, drained
1 - chicken cut into serving pieces
1/2 - teaspoon salt
1/4 - teaspoon freshly ground pepper

Directions

Prepare a medium-hot grill fire and well oiled

  • In your blender add lemon juice, garlic and chilies.
  • Blend until smooth.
  • Rinse chicken and dry.
  • Season chicken with salt and pepper.
  • Place chicken on hot grill.
  • Brush liberally with lemon-chile mixture.
  • Cook 25 minutes on one side.  Turn.
  • Cook another 25 minutes or until meat near thigh bone is no longer pink.
