Grilled Lemon-Jalapeno Chicken
Makes 4
servings
Ingredients:
- 1/2 - cup fresh lemon juice

5 - garlic cloves, minced

1 - can (4 ounces) diced jalapeno chilies, drained

1 - chicken cut into serving pieces

1/2 - teaspoon salt

1/4 - teaspoon freshly ground pepper
Directions:
Prepare a medium-hot
grill fire and well oiled
- In your blender add lemon juice,
garlic and chilies.
- Blend until smooth.
- Rinse chicken and dry.
- Season chicken with salt and pepper.
- Place chicken on hot grill.
- Brush liberally with lemon-chile
mixture.
- Cook 25 minutes on one side. Turn.
- Cook another 25 minutes or until meat
near thigh bone is no longer pink.
