New Mexico Chicken

Ingredients
- 1 - teaspoon salt

1 - teaspoon pepper
-
1/4 - teaspoon thyme
-
1/4 - teaspoon mace
-
1 - fryer chicken (3 pounds) cut up

1 - cup flour
-
1/2 - cup olive oil
-
1 - onion, chopped
-
1 - garlic clove, minced
-
1-1/2 - teaspoons New Mexico chili powder

1/2 - cup chicken broth
-
1 - cup dry white wine
Directions
Preheat oven
to 350° F.
- In a small mixing bowl, add salt,
pepper, thyme and mace.
- Mix and sprinkle over chicken parts.
- Dredge chick in flour and in a heavy skillet,
brown on all sides in oil.
- Place in a casserole dish.
- In the skillet, add onion, garlic and
chili powder and sauté for 5 minutes. Stir in the broth and
wine and cook 5 minutes.
- Pour over chicken.
- Bake for 40 minutes or until tender.
