Black Bean & Corn Salad
Makes 6 servings
Prep Time: 15 min.
Chilling Time: 1 hr.
Ingredients:
- 2 - cups cooked or canned
black beans (drained)
- 2 - cups cooked or canned
kidney beans (drained)
- 2 - cups cooked corn kernels
- 1 - green bell pepper (diced)
- 2 - green onions (chopped)
- 2 - Tablespoons vegetable oil
- 3 - Tablespoons balsamic
vinegar
- 1 - Tablespoon honey
- 1/4 - Tablespoon dry mustard
- 1/4 - teaspoon ground cumin
- Black pepper (to taste)
Directions:
- In a large serving bowl, combine
beans, corn, bell pepper, and green onions.
- In a small jar, stir together
oil, vinegar, honey, mustard, cumin, and black
pepper.
- Pour oil-vinegar mixture over
bean mixture, stir to coast.
- Cover and refrigerate for 1
hour or until thoroughly chilled.
