Denver Sandwich

Makes 4 sandwiches
Prep Time: 10 min.
Cook Time: 10 min.

Ingredients:

• 1 - can (12-ounces) Spam® Classic cut in small pieces
• 1/4 - cup finely chopped onion
• 1 - Tablespoon vegetable oil
• 4 - eggs, beaten
• 8 - slices bread toasted

Directions:

1. In a small skillet, cook and stir Spam® pieces and onion in oil until onion is tender.
2. Pour beaten eggs into skillet.
3. Cook over low heat just until set.
4. Cut into four wedges and turn.
5. Cook until light brown.
6. Serve each wedge between two bread slices.
