Prairie Egg Salad Sandwich

Makes 4 sandwiches

Ingredients:

• 6 - hard-cooked eggs, peeled & diced

• 1/2 - cup mayonnaise

• 1 - Tablespoon lemon juice

• 1 - teaspoon dry mustard

• 1/4 - teaspoon salt

• 1/8 - teaspoon black pepper

• 1 - dash cayenne pepper

• 4 - lettuce leaves

• 8 - slices of bread, whole wheat

Directions:

1. In the mixing bowl, add the eggs, mayonnaise, lemon juice, dry mustard, salt, pepper, and cayenne. 

2. Mix coarsely; you do not want the mixture fine. 

3. Take a tablespoon and spread egg salad on 4 slices of whole wheat bread.

4. Add the lettuce of the bottom half. 

5. Place top slices on the egg salad and cut into halves. 

6. Place on dish and serve.
