Kansas Corn and Rice Casserole
Makes
6 to 8 servings

Ingredients:
- 1/2 cup onion, diced
- 1/2 cup bell pepper, diced
- 1 stick margarine
- 2 cups cooked rice
- 2 cups Niblets corn
- 2 cups tomatoes, diced
- Salt to taste
- 1/2 cup grated cheese
Directions:
Preheat oven to 350°F.
- In a saucepan, sauté onion and bell pepper in
margarine.
- Pour onion mixture into a casserole dish.
- Add rice, corn, tomatoes, and salt.
- Sprinkle with grated cheese and bake for 30
minutes or until cheese melts.
