Palo Duro Canyon Corn

Makes 6 servings

Ingredients:

•    1  Tablespoon olive oil
•    1  onion, finely minced
•    2  cups tomato puree
•    2  Tablespoons diced celery
•    2  Tablespoons chili powder
•    2  Tablespoons butter
•    3  cups uncooked corn kernels
•    1  teaspoon salt
• 1/2  teaspoon pepper

Cooking Directions:

Preheat oven to 350-degrees F.

1. In a heavy skillet, heat the oil and saute the onion until golden.

2. Add in the tomato puree, celery, chili powder, butter, corn, salt and pepper. 

3. Mix well

4. Pour into a buttered casserole, and bake 30 minutes.
