Palo Duro Canyon Corn
Makes 6 servings
Ingredients
- 1 - Tablespoon olive oil

1 - onion, finely minced

2 - cups tomato puree

2 - Tablespoons diced celery

2 - Tablespoons chili powder

2 - Tablespoons butter

3 - cups uncooked corn kernels

1 - teaspoon salt

1/2 - teaspoon pepper
Directions
Preheat oven to 350° F.
- In a heavy skillet, heat the oil and
sauté the onion until golden.
- Add in the tomato puree, celery, chili
powder, butter, corn, salt and pepper.
- Mix well
- Pour into a buttered casserole, and bake 30 minutes.
