Dodge City Chili
Cowboy Cooking Recipes from AlansKitchen.comMakes 6 servings

Prep Time: 15 minutes
Cooking Time: LOW 10 to 12 hrs. or HIGH 5 to 6 hrs.

Ingredients:

  • 2 - pounds ground beef
  • 2 - medium onions, coarsely chopped
  • 1 - green bell pepper, coarsely chopped
  • 2 - cloves garlic, minced
  • 2 - cans (16 ounces) red kidney beans, drained
  • 2 - cans (14-1/2 ounces) diced tomatoes
  • 1 - can (8 ounces) tomato sauce
  • 2 to 3 - Tablespoons chili powder
  • 2-1/2 - teaspoons salt
  • 1 - teaspoon pepper

Directions:

  1. In a skillet, add beef and brown.  Add onion, bell pepper, and garlic halfway through browning process.
  2. Drain.
  3. To the slow cooker, add in the ground beef mixture.
  4. Next, add in the kidney beans, diced tomatoes, tomato sauce, chili powder, salt, and pepper.
  5. Cover and cook on LOW 10 to 12 hours or HIGH 5 to 6 hours.
  6. Serve in soup bowl.
