Texas Campfire Chili
Cowboy Cooking Recipes from AlansKitchen.comMakes 4 to 6 servings

Cook: 2-1/2 hours

Ingredients

  • 1-1/2 - pounds trimmed chuck, cut into 1/2-inch cubes
  • 1 - medium onion, chopped
  • 1 - clove garlic, minced
  • 2 - cups spicy tomato juice
  • 1 - cup beef broth
  • 1 - teaspoon Worcestershire sauce
  • 2 - Tablespoons chili powder
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 1/4 - teaspoon cayenne pepper
  • 1 - Tablespoon masa corn flour
  • 1 - Tablespoon water

Directions

  1. In a 4 quart pot, add meat and onions. 
  2. Brown and drain. 
  3. Next, add the garlic, tomato juice, broth, Worcestershire sauce, chili powder, salt, pepper and cayenne pepper.
  4. Over low heat, simmer for 2 hours (adding more tomato juice if needed).
  5. In a small bowl, combine 1 tablespoon masa with 1 tablespoon water.
  6. Whisk until smooth.
  7. Add to bubbling chili and continue cooking for 15 minutes or until thickened.
