Texas Campfire Chili
Makes 4 to 6
servings

Cook: 2-1/2 hours
Ingredients:

1-1/2 - pounds trimmed chuck (cut into
1/2-inch cubes)

1 - medium onion, chopped
-
1 - clove garlic, minced
-
2 - cups spicy tomato juice
-
1 - cup beef broth
-
1 - teaspoon Worcestershire sauce
-
2 - Tablespoons chili powder
-
1/2 - teaspoon salt
-
1/4 - teaspoon pepper
-
1/4 - teaspoon cayenne pepper

1 - Tablespoon masa corn flour
-
1 - Tablespoon water
Directions:

In a 4 quart pot, add meat and
onions. Brown and drain.

Next, add the garlic, tomato juice,
broth, Worcestershire sauce, chili powder, salt, pepper and cayenne
pepper. Over low heat, simmer for 2 hours
(adding more tomato juice if needed).

In a small bowl, combine 1 tablespoon masa with 1 tablespoon water. Whisk until smooth. Add to bubbling chili and continue
cooking for 15 minutes or until thickened.
