Elda's Almond Cookies

Preheat oven to
350° F.

In your electric mixer, cream butter and
sugar.

Add the egg yolks and cream. Sift flour and mix at
medium speed for 2 minutes.

Use
the confectioner’s sugar to scatter on pastry board and roll dough to
1/4-inch thick. Using a cookie
cutter, cut into diamond shapes.
- Place cookie dough on greased baking
sheet and bake for 15 minutes.
- Allow
the cookies to cool.
- To make icing, lightly beat egg yolks and
stir in water. You want a
thick paste, as gradually add the confectioner’s sugar to make the thick
paste.
- Ice cookies and
sprinkle almonds. Return to
oven about 3 minutes “to dry.”
