Chippy Chewy Bars
Cookie Recipes from AlansKitchen.com Makes 48 bars

Baking Time: 20 min.

Ingredients

  • 1/2 - cup (1 stick) butter or margarine
  • 1-1/2 - cups graham cracker crumbs
  • 1-2/3 - cups (10-ounces package) Reese’s Peanut Butter Chips, divided
  • 1-1/2 - cups Sweetened Coconut Flakes
  • 1 - can (14 oz.) sweetened condensed milk (not evaporated milk)
  • 1 - cup Hershey’s Semi-Sweet Chocolate Chips or Hershey’s Mini Chips Semi-Sweet Chocolate Chips
  • 1-1/2 - teaspoons shortening (do not use butter, margarine, spread or oil)

Directions

Preheat oven to 350°F.

  1. Place butter in 13x9x2-inch baking pan. Heat in oven until melted and remove pan from oven.
  2. Sprinkle graham cracker crumbs evenly over butter and press down with fork.
  3. Sprinkle 1 cup peanut butter chips over crumbs and sprinkle coconut over chips.
  4. Layer remaining 2/3 cup peanut butter chips over coconut and drizzle sweetened condensed milk evenly over top.
  5. Press down firmly.
  6. Bake 20 minutes or until lightly browned.
  7. Combine chocolate chips and shortening in small microwave-safe bowl.
  8. Microwave at HIGH (100%) 1 minute; stir.
  9. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth.
  10. Drizzle evenly over top of baked mixture.
  11. Cool completely and cut into bars.
Alan’s Kitchen Tip:
For a lighter drizzle, use 1/2 cup chocolate chips and 3/4 teaspoon shortening. Microwave at HIGH 30 seconds to 1 minute or until chips are melted when stirred.
