Tropical Lime Bars

Ingredients:

  • Crust Ingredients:
    • 2 cups all-purpose flour
    • 1/2 cup powdered sugar
    • 2 teaspoons freshly grated lime peel
    • 1 cup cold Butter
  • Filling Ingredients:
    • 1-1/2 cups sugar
    • 1/3 cup lime juice
    • 1/4 cup all-purpose flour
    • 4 eggs, slightly beaten
    • 2 teaspoons freshly grated lime peel
    • 1/2 teaspoon baking powder
    • 1 drop green food color
    • 1/4 cup sliced almonds
    • 2 Tablespoons powdered sugar

Directions:

Preheat oven to 350-degrees F.

  1. In a large bowl, combine 2 cups flour, 1/2 cup powdered sugar and 2 teaspoons lime peel.  Cut in butter until mixture resembles coarse crumbs.

  2. Press onto bottom of ungreased 13x9-inch baking pan.

  3. Bake for 20 minutes or until edges are lightly browned.

  4. In a large bowl, combine 1-1/2 cups sugar, 1/3 cup lime juice, 1/4 cup all-purpose flour, 4 eggs, 2 teaspoons freshly grated lime peel, 1/2 teaspoon baking powder, and 1 drop green food color.  Mix well.

  5. Spread filling over hot, partially baked crust and sprinkle with almonds.

  6. Continue to bake for 23 to 28 minutes or until edges are lightly browned. Cool completely.

  7. Sift powdered sugar over cooled bars. Cut into bars.
