Humpty Dumpty Hawaiian Bars

Makes 30 barsDessert Bars Recipes from AlansKitchen.com

Ingredients:

  • 1/2 - cup margarine, softened

  • 1 - cup sugar

  • 3 - eggs, beaten

  • 1 - ripe banana, mashed

  • 2-1/2 - cup all-purpose flour

  • 1 - teaspoon baking soda

  • 1 - can (8 ounces) crushed pineapple, drained

  • 1/4 - teaspoon salt

  • 1/4 - cup powdered sugar

  • 1/4 - cup flaked coconut

Directions:

Preheat oven to 350 F. Use vegetable cooking spray to coat 13x9-inch baking pan.

  1. In a mixing bowl, add margarine and sugar. Beat together until light and fluffy.  Next, fold in eggs, banana, flour, baking soda, pineapple and salt until just mixed. 

  2. Pour into baking pan.  Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. 

  3. Cool 10 minutes.  Sprinkle powdered sugar and coconut over top.  Cut into bars.
