Rum
Raisin Tiramisu Brownies
Makes 8 servings.
One bite of this yummy double
fudge brownie is all you will need for your permit
to heaven.
Ingredients
Prep Time: 20 min.
Cooking Time: 5 min.
Baking Time: 35 min.

1/3 - cup dark rum

3/4 - cup golden raisins

1 - package double fudge brownie mix
-
2 - large eggs
-
1/3 - cup vegetable oil
-
1/2 - cup heavy cream
-
2 - Tablespoons instant espresso coffee crystals
-
16 - ounces mascarpone cheese
-
1 - teaspoon vanilla extract
-
1/4 - cup confectioners' sugar
-
1/4 - cup cocoa, optional
Directions
Preheat oven to
350° F.
Spray 8-inch square pan
with no-stick cooking spray.

In a small saucepan on
medium heat, you want to add your rum and bring to a
boil.

Remove from heat and add raisins.

Set aside to
cool.

In large bowl, you need to blend the brownie
mix, eggs, oil and rum-soaked raisins.

Spread evenly
in pan and bake for 35 minutes or until toothpick
inserted in center comes out clean.

Let brownies
cool while you make the tiramisu.

To prepare tiramisu, in microwave-safe bowl, you
need to warm the heavy cream.

Next, stir in the
instant espresso crystals until completely
dissolved.

Let cool.

In another bowl, add mascarpone cheese, vanilla,
confectioners’ sugar and espresso cream mixture.

Use your electric mixer on low speed and beat
together.

Mix thoroughly until smooth.

Chill until
you are ready to use.

To serve, cut brownies into
eight triangles.

Place a large spoonful of tiramisu
in bowl, top with brownie and sprinkle sieved cocoa
on top.
