Best Ever Carrot Cake

Baking Time: 1 hr.

Ingredients:

  • 1-1/2 - cups oil
  • 1-3/4 - cups sugar
  • 3 - eggs
  • 2 - cups all-purpose flour
  • 2 - teaspoons baking soda
  • 1/2 - teaspoon salt
  • 3 - teaspoons cinnamon
  • 1 - teaspoon ground cloves
  • 1 can (8-ounce) crushed pineapple
  • 2 - cups carrots (grated)
  • 1 - cup nuts (chopped)
  • Frosting (recipe below)

Directions:

Preheat oven to 350 F.  Grease and flour a 9- or 10-inch tube pan.

  1. In a large bowl, you want to beat oil, sugar, eggs until well mixed.
  2. In a medium bowl, sift together flour, baking soda, salt, cinnamon, and cloves.
  3. Add flour mixture to egg-sugar mixture and mix well.
  4. Drain pineapple and add carrots, nuts and pineapple to flour mixture.
  5. Blend until batter is well mixed.
  6. Pour batter into tube pan.  Bake for 1 hour or until done.
  7. Let cool on rack and cover with Frosting

Frosting

Ingredients:

  • 2 - packages (8-ounce) cream cheese (softened)
  • 1 - cup powdered sugar
  • 1 - teaspoon vanilla
  • Coconut.

Directions:

  1. In your large mixing bowl, cream together cream cheese, powdered sugar, and vanilla.  Mix until well blended
  2. Spread over cake and sprinkle with coconut.
