Best Ever Carrot Cake
Prep

Baking Time: 1 hr.
Ingredients:
- 1-1/2 - cups oil
- 1-3/4 - cups sugar
- 3 - eggs
- 2 - cups all-purpose flour
- 2 - teaspoons baking soda
- 1/2 - teaspoon salt
- 3 - teaspoons cinnamon
- 1 - teaspoon ground cloves
- 1 can (8-ounce) crushed
pineapple
- 2 - cups carrots (grated)
- 1 - cup nuts (chopped)
- Frosting (recipe below)
Directions:
Preheat oven to 350° F.
Grease and flour a 9- or 10-inch tube pan.
- In a large bowl, you want to
beat oil, sugar, eggs until well mixed.
- In a medium bowl, sift
together flour, baking soda, salt, cinnamon, and cloves.
- Add flour mixture to egg-sugar
mixture and mix well.
- Drain pineapple and add
carrots, nuts and pineapple to flour mixture.
- Blend until batter is well
mixed.
- Pour batter into tube
pan. Bake for 1 hour or until done.
- Let cool on rack and cover
with Frosting
Frosting
Ingredients:
- 2 - packages (8-ounce) cream cheese
(softened)
- 1 - cup powdered sugar
- 1 - teaspoon vanilla
- Coconut.
Directions:
- In your large mixing bowl,
cream together cream cheese, powdered sugar, and
vanilla. Mix until well blended
- Spread over cake and sprinkle
with coconut.
