Chocolate
Zucchini Cake
Makes 1 9x13 pan.
Ingredients
1/4
- cup butter
1/2
- cup vegetable oil
1-3/4 -
cup sugar

– eggs
1
– teaspoon vanilla
2-1/2 -
cups all-purpose flour
1/4
- teaspoon salt
1/2
- teaspoon baking powder
1
– teaspoon baking soda
1-1/2 -
teaspoon cinnamon
1/2
- cup buttermilk
4
– tablespoons cocoa
1
- cup chocolate chips
2
– cups
zucchini, grated
1/2
- cup nuts, chopped
Directions
Preheat oven to
350º F.
- In a mixing
bowl, add together the
butter, oil, and sugar.
- Beat
ingredients until fluffy.
- Blend
in the eggs and vanilla.
- Sift
together the flour, salt, baking powder, baking soda and cinnamon and add
to butter/oil mixture.
- Then
add buttermilk, and cocoa.
- Mix
in a 1/2 cup of chocolate chips and zucchini.
- Pour mixture into a buttered and floured
9x13 pan.
- Sprinkle with 1/2 -
cup chocolate chips and nuts.
- Bake
for 35 to 45 minutes.
