Continental Coffee Cake

Ingredients:

  • Cake:
    • 2 1/2 - cups all-purpose flour
    • 1 - Tablespoon baking powder
    • 1/2 - teaspoon salt
    • 1/2 - cup (1 stick) butter or margarine, softened
    • 1 1/4 - cup firmly packed brown sugar
    • 2 - eggs
    • 1 - cup Egg Nog
  • Topping:
    • 1/2 - cup firmly packed brown sugar
    • 1/2 - cup chopped pecans

Directions:

Preheat oven to 350-degrees F. Greased 13x9-inch baking pan.

  1. In a bowl, stir together flour, baking powder and salt. Set aside.
  2. In large bowl, beat butter and 1 1/4 cups brown sugar until fluffy.
  3. Add eggs and beat well.
  4. Add flour mixture alternately with Egg Nog, beating until smooth after each addition.
  5. Pour into baking pan.
  6. Combine 1/2 cup brown sugar and pecans. Sprinkle over top of cake.
  7. Bake 30 to 35 minutes or toothpick inserted near center comes out clean.
  8. Cool slightly. Serve warm or cool. Store leftovers covered at room temperature.
