Raspberry Streusel Coffee Cake

Ingredients:

- 3/4 - cup sugar
- 1/4 - cup butter, softened
- 1/2 - cup milk
- 1 - egg
- 2 - cups all-purpose flour
- 2 - teaspoons baking powder
- 1/2 - teaspoon salt
- 1/2 - teaspoon ground nutmeg
- 1 - cup fresh or
individually frozen raspberries, unthawed
- Streusel Ingredients:
- 1/2 - cup sugar
- 1/3 - cup all-purpose flour
- 1/2 - teaspoon ground cinnamon
- 1/2 - teaspoon ground nutmeg
- 1/4 - cup cold butter
Directions
Preheat oven to 375°F.
- In a large bowl, you want to combine
3/4 cup sugar and 1/4 cup butter.
- Beat at medium speed, scraping bowl
often, until creamy.
- Add milk and eggs; continue beating,
scraping bowl often, until well mixed.
- Add 2 cups flour, baking powder,
salt and nutmeg.
- Reduce speed to low. Beat, scraping
bowl often, until well mixed.
- Gently stir in raspberries by hand.
- Spread batter into greased and
floured 8-inch square baking pan.
- In a small bowl, you want to stir
together 1/2 cup sugar, flour, cinnamon, and nutmeg.
- Cut in butter until mixture
resembles coarse crumbs. Sprinkle mixture over batter.
- Bake for 35 to 40 minutes or until
toothpick inserted in center comes out clean.
