Carrot Cookies

about 2 dozen cookies

Ingredients:
- 1 cup shortening
- 3/4 cup sugar
- 1 egg
- 1 cup cooked mashed carrots
- 2 cups flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon lemon extract
- 1 teaspoon vanilla
Directions:
Preheat oven to 350° F. and grease baking sheet.
- In a bowl, cream shortening, sugar, egg, and mashed carrots.
- Sift flour, baking powder, and salt. Add to creamed mixture.
- Add lemon extract and vanilla.
- With a teaspoon, drip dough on prepared baking sheet.
- Bake 12 minutes or until brown.
