Chocolate Cashew Drop
Cookies
Makes about 3 doz. or 9 servings, four cookies each

Total Time: 1 hr. 5 min.
Ingredients
- 3 - egg whites
- 3/4 - cup sugar
- 3 - Tablespoon cocoa powder
- 1/2 cup Cashews, coarsely chopped
Directions
Preheat oven to 250°F. Grease baking
sheet.
- Place egg whites in small bowl of
electric mixer.
- Gradually add sugar, beating on high
speed until stiff peaks form. (Do not under beat.)
- Add cocoa powder; stir gently until well
blended.
- Stir in cashews.
- Drop teaspoonfuls of the cookie dough
onto baking sheet.
- Bake 45 to 50 min. or until cookies are
dried on the outside but still soft in the centers.
- Remove to wire racks and cool completely.
- Store in tightly covered container at
room temperature.
