Butter Pecan Cookies
Makes about 8 dozen cookies.
2 - cups butter, soft
1-1/3 cups brown sugar, packed
2 - egg yolks, beaten
4 - cups all-purpose flour
1/4 - teaspoon salt
1/2 - cup pecan halves
Preheat oven to 375° F.
- In an electric mixer, cream butter and sugar.
- Next stir in egg
yolks.
- Sift in the flour and salt and mix well.
- Form into a dough
ball and wrap in plastic wrap.
- Place in refrigerator and chill 1
hour.
- Form dough into 1-inch balls and place on ungreased cookie
sheet.
- Press pecan halves into dough and gently flatten.
- Place in
oven and bake 10 to 12 minutes.
