Peanut Butter and Macadamia Cookies
Makes about 36 cookies.

Ingredients

Prep Time: 10 min.
Baking Time: 20 min.

2-1/4 cups all-purpose flour
1 - teaspoon baking powder
1 - teaspoon baking soda
1 - teaspoon salt
1-1/2 - cups creamy or chunky peanut butter
1 - cup margarine, softened
1 - cup granulated sugar
1 - cup firmly packed brown sugar
1 - teaspoon vanilla extract
2 - large eggs, slightly beaten
1 - package (12 ounces) white morsels
1-1/3 - cups macadamia nuts, coarsely chopped

Directions

I preheat my oven to 350° F.

  • In a small bowl, first add the flour, baking powder, baking soda, and salt. 
  • Mix and set aside.
  • In a large mixing bowl, add in the peanut butter, margarine, sugar, brown sugar, and vanilla. 
  • Beat mixture until creamy with an electric mixer. 
  • Add eggs and mix until well blended. 
  • Gradually add flour mixture. 
  • Stir in morsels and nuts.
  • Drop your batter by rounded tablespoons onto an ungreased cookie sheet, 1-1/2 inches apart. 
  • You want to bake for 15-16 minutes. 
  • Cool for 5 minutes on cookie sheet. 
  • Remove to wire rack and cool completely.
