Peanut Butter Cupcakes
Makes 18 cupcakes
Prep Time: 10 min.
Baking Time: 25 min.
Ingredients
- 1 - cup packed brown sugar
- 1/2 - cup Peanut Butter
- 1/4 - cup butter or margarine,
softened
- 2 - eggs
- 1 - teaspoon vanilla
- 1-1/2 - cups sifted all-purpose
flour
- 2 - teaspoons baking powder
- 1/2 - cup milk
- 1 - cup (16-ounce package) semisweet chocolate pieces
Directions
Preheat oven to 350ºF.
- Cream brown sugar, peanut butter
and butter.
- Beat in eggs and vanilla.
- Mix flour, baking powder and 1/2
teaspoon salt.
- Add to creamed mixture
alternately with milk, mixing till blended.
- Spoon a rounded tablespoonful of
batter into greased muffin pans or paper bake cups in muffin
pans.
- Place 10 to 12 chocolate pieces
in center of each spoonful of batter.
- Top with a second tablespoonful
of batter.
- Bake in 350ºF oven about 25
minutes or till done.
