Chocolate Cheesecake CupcakesPrep Time: 20 min.

Ingredients

  • 2 - cups (12-ounce package) Semi-Sweet Chocolate Morsels, divided
  • 1-1/2 - cups all-purpose flour
  • 1 - teaspoon baking soda
  • 1/2 - teaspoon salt
  • 1/2 - cup granulated sugar
  • 1/3 - cup vegetable oil
  • 1 - large egg
  • 1 - teaspoon vanilla extract
  • 1 - cup water
  • 2 - packages (3 ounces each) cream cheese, softened
  • 1/4 - cup granulated sugar
  • 1 - large egg
  • 1/8 - teaspoon salt

Directions

Preheat oven to 350° F. Grease or paper-line 16 muffin cups.

  1. Microwave 1/2 cup morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds and stir. (The morsels may retain some of their original shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until morsels are melted.)
  2. Cool to room temperature.
  3. In a small bowl, add flour, baking soda and salt. Mix.
  4. in large mixer bowl, add sugar, oil, egg and vanilla extract beat until blended.
  5. Beat in melted chocolate.
  6. Gradually beat in flour mixture alternately with water (batter will be thin).
  7. in small mixer bowl, add cream cheese, sugar, egg and salt beat until creamy.
  8. Stir in 1 cup morsels.
  9. Spoon batter into prepared muffin cups, filling 1/2 full.
  10. Spoon filling by rounded tablespoon over batter.
  11. Spoon remaining batter over filling.
  12. Bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean.
  13. While still hot, sprinkle with remaining 1/2 cup morsels.
  14. Let cool for 5 minutes or until morsels are shiny; spread to frost.
  15. Remove to wire racks to cool completely.
