Spencer's Raisin Pie
Makes 1 pie
Prep Time: 15 min.
Baking Time: 45 min.
Ingredients:
- 1 - box (15-ounces) raisins
- 4 - cups water
- 1 - cup sugar
- 1/2 - teaspoon nutmeg
- 1/4 - teaspoon salt
- 1 - teaspoon vinegar
- 3 - Tablespoons brown sugar
- 4 - Tablespoons cornstarch
- 2 - pie crusts
Directions:
Preheat oven to 375 F.
- In a 2-quart saucepan, mix raisins,
water, sugar, nutmeg, salt, vinegar, and brown sugar.
- On medium heat, bring to a boil and cook
for about 5 minutes.
- In a small bowl, mix cornstarch with a
small amount of water. Gradually stir into hot raisin mixture and
thicken.
- Pour into bottom pie crust and cover
with top crust.
- Bake for 45 minutes or until golden
brown.
