Easy and Simple
Apricot Pie
Makes 8 servings.
1/2 - cup Original Bisquick® mix
1 - cup evaporated milk
1/2 - cup sugar
2 - Tablespoon butter
1 - teaspoon vanilla
2 - eggs
1 - can (8-1/4 ounces) apricot halves, drained and mashed
1/4 - cup apricot preserves
Sweetened whipped cream, optional
Preheat oven to 350º F. Grease 9-inch pie plate.
- In a large mixing bowl, add Bisquick, evaporated milk, sugar,
butter, vanilla, eggs, and canned apricots.
- Stir together until
blended.
- Pour into pie plate. Bake for 35 to 40 minutes or until
knife inserted in center comes out clean.
- Cool completely for about
1 hour.
- Heat preserves over low heat until melted and spread over pie.

Allow to cool.
- Garnish with whipped cream.
- Cover and refrigerate any
remaining pie.
