Easy and Simple
Apricot Pie
Makes 8 servings.

1/2 - cup Original Bisquick® mix
1 - cup evaporated milk
1/2 - cup sugar
2 - Tablespoon butter
1 - teaspoon vanilla
2 - eggs
1 - can (8-1/4 ounces) apricot halves, drained and mashed
1/4 - cup apricot preserves
Sweetened whipped cream, optional

Preheat oven to 350º F. Grease 9-inch pie plate.

  • In a large mixing bowl, add Bisquick, evaporated milk, sugar, butter, vanilla, eggs, and canned apricots. 
  • Stir together until blended. 
  • Pour into pie plate. Bake for 35 to 40 minutes or until knife inserted in center comes out clean. 
  • Cool completely for about 1 hour.
  • Heat preserves over low heat until melted and spread over pie. 
  • Allow to cool. 
  • Garnish with whipped cream. 
  • Cover and refrigerate any remaining pie.
