Home Town Chicken Cordon Bleu
Prep Time: 25 min.
Baking Time: 45 min.
Ingredients:
- 2 - whole chicken breasts, split,
deboned, and skinned
- 1/8 - teaspoon salt
- 1/8 - teaspoon pepper
- 1 - egg, beaten
- 1/2 - cup milk
- 2 - slices (1-ounce each) cooked ham
- 2 - slices (1-ounce each) Swiss
cheese
- 1/2 - cup all-purpose flour
- 2/3 - cup fine bread crumbs
- 2 - Tablespoons grated Parmesan
cheese
- 1/4 - cup butter or margarine
Directions:
Place each breast on sheet of waxed
paper. Flatten with meat mallet to 1/4-inch thickness.
- Sprinkle chicken breast with salt
and pepper.
- In a mixing bowl, combine egg and
milk. Dip both sides of breast in mixture.
- Place piece of ham and cheese in
center of each breast. Fold over and close with toothpicks.
- Dredge in flour, dip in remaining
milk mixture and cost well wieth bread crumbs mixed with Parmesan
cheese.
- Cover and chill for 1 hour or
longer.
- Preheat oven to 350° F.
- Melt butter in heavy skilled, brown
chicken breasts on both siees.
- Move to a lightly greased
9-inch-square pan.
- Bake uncovered for 40 to 45 min.
