Red Beans & Rice with Andouie Sausage

Make 4 to 6 servings Potluck Recipes

Ingredients

  •    1  package (16 ounces) Andouie sausage

  •    1  teaspoon vegetable oil

  • 1/2  cup (3-ounces) smoked ham, diced

  • 1/2  cup chopped onion

  •    1  clove garlic, minced

  • 1/4  teaspoon hot pepper sauce, or to taste

  • 1/2  teaspoon salt

  • 1/8  teaspoon black pepper

  •    1  medium tomato, diced

  •    2  cups chicken broth

  •    1  cup long-grain enriched rice

  •    1  can (16-ounces) red beans, drained

Directions

  1. In frying pan, brown sausage.

  2. In a large, deep skillet with tight-fitting lid, sauté ham, onion and garlic in oil until lightly browned, about 2-4 minutes.  Add sausage, stir in all remaining ingredients, and bring to a boil. 

  3. Lower heat, cover and simmer until rice is tender, about 15-20 minutes.
