Deviled Crabmeat
Pennsylvania Dutch Cooking from AlansKitchen.comMakes 6 servings

Ingredients:

  • 1 - pound crabmeat

  • 1/4 - cup green peppers, chopped

  • 1/4 - cup onion, chopped

  • 4 - Tablespoons butter, soft

  • 2 - Tablespoons all-purpose flour

  • 1/2 - cup milk

  • 1 - hard-boiled egg, chopped

  • 1/2 - teaspoon salt

  • 1/4 - teaspoon pepper

  • 1/2 - teaspoon Worcestershire sauce

  • 1/4 - teaspoon paprika

  • bread crumbs

Directions:

Preheat oven to 350° F.

  1. Remove all pieces of shell from crabmeat.

  2. Into a frying pan, add 2 tablespoons butter. 

  3. Sauté pepper and onion until tender. 

  4. Remove from pan. 

  5. Into frying pan at medium heat, add the remaining butter and flour.

  6. Next, stir in the milk to make a smooth paste. 

  7. Simmer and stir until mixture thickens. 

  8. Add the sautéed pepper and onion back into the pan. 

  9. Then add the crabmeat, egg, salt, pepper, and Worcestershire sauce.

  10. Use 6 crab shells and fill with crab mixture, sprinkling crumbs and paprika over the tops. 

  11. Pop into oven and bake for 20 to 25 minutes or until nicely browned.
