Greek Pot Roast with Olives

Eastern Home Cooking RecipesMakes 6 to 8 servings

Prep Time: 20 min
Cooking Time: 30 min + 4 hrs

Ingredients:

  • 3     Tablespoons olive oil
  • 1     beef rump roast (3 to 4 pounds)
  • 1     clove garlic
  • 1/2  teaspoon salt
  • 1/4  teaspoon pepper
  • 1     cup red wine
  • 2     Tablespoons tomato past
  • 1/2  cup green olives

Directions:

  1. In a frying pan, heat oil.  Brown roast on all sides.
  2. Into a deep pot with cover, add meat, garlic, salt, and pepper.
  3. Pour wine into frying pan, scrape brown bits into sauce and pot roast.
  4. Simmer over low for 30 minutes.
  5. Add tomato past and continue to cook for 3 to 4 hours covered.
  6. Add olive during last 30 minutes of cooking.
