Chicken
With Dumplings
Makes 4 servings
Ingredients:

1 - stewing chicken
-
2 - small onions
-
2 - pints water
-
1/2 - teaspoon salt
-
1/4 - teaspoon pepper
-
1 - Tablespoon all-purpose flour
-
Dumplings
1 - egg
-
3 - Tablespoons milk
-
2/3 - cup all-purpose flour
-
1/4 - teaspoon salt
-
1 - teaspoon baking powder
Directions:
-
Wash the chicken, cut up and place in water in
stockpot at moderate heat.

Add onions, and cook for 2-hours and 30 minutes
or until chicken is tender.

Add the salt and pepper.
-
Thicken the broth with flour pressed through a
sieve.

To make the dumplings, beat egg until
light, add milk, and stir.
-
Sift the flour, salt, and baking
powder.
-
Mix with eggs and milk to form a heavy
batter.

Using a teaspoon, drop dough into the
rapidly boil stew.
-
Turn heat down to low.
-
Cover tightly and simmer for 15
minutes.
