Apple Pancakes
Makes 16 (4-inch) servings

Prep Time: 10 min.
Baking Time: 16 min.

Ingredients

  • 2 - cups all-purpose flour
  • 1 - teaspoon baking soda
  • 1/4 - teaspoon salt
  • 1/4 - cup sugar
  • 2 - cups buttermilk
  • 2 - large eggs
  • 2 - Tablespoons butter (melted)
  • 1 - large Granny Smith apple (peeled & chopped)

Directions

  1. In a large bowl, you want to combine flour, baking soda, salt, and sugar.  You want to make a well in the middle.
  2. In a bowl, stir together buttermilk, eggs,  and butter.  Add to dry ingredients, stirring just until moistened.  
  3. Fold in the apple.
  4. Pour 1/4-cup for each pancake onto a hot, lightly greased griddle.
  5. Cook until tops are covered with bubbles and edges looked cooked.  Turn and cook other side.
  6. Serve.
