Peanut Butter-Fudge
Cake with Fudge Frosting
Makes
24 servings
Prep Time: 20 min.
Baking Time: 25 min.
Ingredients:
- 2 - cups sugar
- 2 - cups all-purpose flour
- 1 - teaspoon baking soda
- 1/2 - teaspoon salt
- 1-1/2 cups creamy peanut butter
- 1/2 - cup buttermilk
- 2 - large eggs (lightly beaten)
- 1 - cup butter or margarine
- 1 - cup water
- 1/4 - cup cocoa
- Fudge
Frosting (see below)
Directions:
Preheat oven to 325° F. Grease
1015-inch jellyroll pan.
- In a large bowl, you want to combine
sugar, flour, baking soda, and salt. Stir in peanut butter,
buttermilk, and eggs.
- In a heavy saucepan over medium heat,
melt butter.
- Whisk in 1-cup water and cocoa.
Bring to a boil, whisking constantly.
- Remove from heat. Stir cocoa
mixture into flour mixture. Pour into jellyroll pan.
- Bake for 20 to 25 minutes or until a
wooden pick inserted in center of cake comes out clean.
- Spread frosting over warm cake.

Makes 3 cups
Prep Time: 20 min.
- 1/2 - cup butter or margarine
- 1/3 - cup milk
- 1/4 - cup cocoa
- 1 package (1-pound) powdered sugar
- 1 - teaspoon vanilla extract
Directions:
- In a saucepan over medium heat, melt
butter.
- Whisk in milk and cocoa. Bring
mixture to boil.
- Remove from heat. Gradually add
sugar; stirring until smooth, stir in vanilla.
Kitchen Tip: To thin frosting, add
1 to 2 Tablespoons milk.
