Baked Linguine with Meat Sauce
Makes 8 servings

Prep Time: 40 min.
Baking Time: 30 min.
Standing Time: 5 min.

Ingredients:

  • 2 - pounds lean ground beef

  • 2 - garlic cloves (minced)

  • 1 - can (28-ounce) crushed tomatoes

  • 1 - can (8-ounce) tomato sauce

  • 1 - can (6-ounce) tomato paste

  • 1 - teaspoon salt

  • 2 - teaspoons sugar

  • 8 - ounces uncooked linguine

  • 1 - container (16-ounce) sour cream

  • 1 - package (8-ounce) cream cheese (softened)

  • 1 - bunch green onions (chopped)

  • 2 - cups (8-ounces) sharp Cheddar cheese (shredded)

Directions:

Preheat oven to 350 F.  Lightly grease 9x13-inch baking dish.

  1. In a Dutch oven at medium heat, cook beef and garlic until beef crumbles and is no longer pink.  Stir often.

  2. Stir in the tomatoes, tomato sauce, tomato paste, salt, and sugar.  Simmer for 30 minutes.  Set meat sauce aside.

  3. Cook pasta according to package directions and drain.  Place pasta in baking dish.

  4. In a bowl, stir together sour cream, cream cheese, and green onion.  Spread over pasta.  Top with meat sauce.

  5. Bake for 20 to 25 minutes or until thoroughly heated.

  6. Sprinkle with Cheddar cheese and bake for an additional 5 minutes.

  7. If desired, serve with a salad and bread.
