Easy Cheesy Chicken Skillet
Makes 4 servings

Prep Time: 5 min.
Cooking Time: 20 min.

Ingredients

  • 4 - fresh boneless, skinless chicken breasts
  • 1 - cup reduced sodium chicken broth
  • 1/4 - teaspoon garlic pepper seasoning
  • 3/4 - cup water
  • 2 - cup frozen broccoli florets
  • 2 - cup instant white rice, uncooked
  • 3/4 - cup light pasteurized process cheese product

Directions

Sprinkle chicken evenly with garlic pepper seasoning. Spray large skillet with nonstick cooking spray.

  1. Heat sprayed skillet over medium-high. 
  2. Add your chicken breasts. 
  3. Cover and cook for 4 minutes per side or until brown. 
  4. Remove chicken from skillet, cover and keep warm.
  5. In the same skillet, you want to add the broth, water and broccoli; bring to a boil. 
  6. Stir in rice and return to a boil. 
  7. Top with chicken. 
  8. Cover and reduce heat to low. 
  9. Cook for 5 to 10 minutes or until liquid is absorbed and chicken is done (internal temp 170°F). 
  10. Remove chicken, cover and keep warm.
  11. Stir cheese into rice until melted. 
  12. Top rice mixture with chicken.
