Italian-Style Chicken Skillet

Makes 4 servings

Total Time: 25 min

Ingredients

  • 4 - small boneless skinless chicken breast halves (1 lb.)
  • 1 - onion, halved, sliced
  • 1 - red pepper, cut into thin strips
  • 1/2 - cup fat-free reduced-sodium chicken broth
  • 1/4 - cup Tuscan House Italian Dressing and Marinade

Directions

  1. HEAT large nonstick skillet sprayed with cooking spray on medium-high heat.  Add chicken; cover with lid. Cook for 5 to 7 minutes on each side or until chicken is cooked through (165º F).  Remove chicken from skillet and keep warm.

  2. ADD vegetables to skillet.  Cook, uncovered, for 4 minutes or until crisp-tender, stirring occasionally.

  3. STIR in broth and dressing.  Return chicken to skillet.  Cook for 1 minute or until chicken is coated and heated through.

Alan’s Kitchen Tips

  • While the chicken is simmering, prepare brown rice to serve as an accompaniment.
