Sweet Bean Salad
Makes 6-1/2 cups

Prep Time: 10 min.
Cooking Time: 5 min.

Ingredients:

  • 1 - can (19-ounce) cannellini beans

  • 1 - can (15 1/2-ounce) kidney beans

  • 1 - can (14 1/2-ounce French-cut green beans

  • 1/2 - cup sunflower oil

  • 1/2 - cup white vinegar

  • 1/3 to 1/2 cup sugar

  • 4 - teaspoon dried basil

  • 1 - teaspoon dry mustard

  • 1/2 - teaspoon salt

  • 1 - can vegetarian baked beans (un-drained)

  • 1 - small onion (chopped)

Directions:

  1. Rinse and drain cannellini, kidney, and green beans.  Set aside.

  2. In a large saucepan over low heat, cook oil, vinegar, sugar, basil, dry mustard, and salt for 5 minutes or until sugar dissolves.

  3. Stir in drained beans, vegetarian baked beans, and onion.

(Serve salad warm or chilled.)
