Ham-Swiss-&-Asparagus Sandwiches
Makes 4 servings

Prep Time: 20 min.
Broiling Time: 1 min.

Ingredients:

  • 3/4 - pound fresh asparagus
  • 3 - Tablespoons light butter or margarine (softened)
  • 1 - small garlic cove (minced)
  • 4 - French (6-inch) bread loaves (split)
  • 3 - Tablespoons light mayonnaise
  • 8 - Baked Glazed Ham slices
  • 4 - Swiss cheese slices
  • Green leaf lettuce
  • 3 - plum tomatoes (sliced)

Directions:

  1. You want to snap off tough ends of asparagus.  Cook in boiling water to cover for 3 minutes or until crisp tender.  Drain and plunge into ice water to stop the cooking process.  Drain and chill.
  2. In a small bowl, you want to stir together the butter (or margarine) and garlic.
  3. Evenly spread butter mixture bottom halves of bread.  
  4. Evenly spread mayonnaise over the top halves of the bread.
  5. Evenly layer bottom halves with ham slices, asparagus, and cheese.
  6. Place on baking sheet and broil 2-inches from heat 1-minute or just until cheese melts.
  7. Evenly top with lettuce, tomato, and top half of bread.
