Ingredients
- 8 - large Eggs
- 1/2 - cup Whole Milk
- 1 - cup Cheddar grated
- 1/3 - cup Cream Cheese cubed
- 1 - Tablespoon Unsalted Butter
- 6 - ounces Smoked Ham Steak sliced
- 1 - cup Green Bell Pepper sliced
- 2/3 - cup Red Bell Pepper sliced
- 1/2 - cup Green Onion sliced
- 1/2 - teaspoon Salt
- 1/2 - teaspoon Pepper
- 4 - cups Tortilla Chips
- Whole Chives (fresh) for garnish
Directions
Preheat oven to 350°F.
- Scramble eggs while adding milk
and cheeses.
- Melt butter in a sauté pan over
medium heat.
- Sauté ham with peppers and onions
for 5 minutes.
- Add sautéed ingredients to egg
mix while stirring.
- Pour egg/vegetable mixture into
baking dish, add salt and pepper to taste.
- Place chips around edges of baking
dish (halfway sticking out).
- Cover with foil, bake 350°F for
20-25 minutes.
- Garnish and serve.
