Fettuccini
Makes 4 servings.

Ingredients

1 - pound fettuccini

3 - slices bacon, diced

2 - slices prosciutto, chopped

4 - tablespoons butter

2 - eggs

1/2 - cup Parmesan cheese

1/2 - cup Romano cheese

Directions
  • In a large pot, add water and salt and bring to a boil.
  • When it comes to a boil, drop in the fettuccini.  You want to stir gently.  Cook until the entire fettuccini rise to the top of the pot, about 4 minutes after returning to a boil.  Drain and keep hot.
  • In a frying pan, cook diced bacon until brown.
  • Stir in the prosciutto and add butter.
  • Beat eggs with two tablespoons cheese.
  • To the fettuccini add the bacon and ham, add the eggs, and toss all together gently.
  • Serve immediately with remaining cheese sprinkled on top.

Picnicking & Tailgating

You want to prepare the bacon-prosciutto, a day or two earlier.  Heat in a microwave just before leaving and store in heated thermal container.

Cook the fettuccini just before leaving and store in another heated thermal container.  Place the Parmesan and Romano cheese in a separate container and place in the ice chest to keep cool.

When at the picnic site, put the fettuccini and bacon-prosciutto mixture together and top with the cheese.
