Roasting: What do I need?

When it comes to cooking methods, roasting is about as easy as it gets. If you have an oven and a rimmed baking sheet, you can roast! Take it a step further with a roasting rack and pan: The rack sits inside the roasting pan, elevating the meat so air can circulate around it, helping speed the cooking process.

Tip

When roasting large cuts of meat or whole chicken, create a flavorful roasting "rack" by building a grid with stalks of celery, whole carrots and thick slices of onion. The vegetables will flavor the pan drippings, making for a delicious gravy.
