Cajun Pecan Pork

Ingredients:
- 1/2 - cup pecan halves (toasted)
- 1/2 - cup dry breadcrumbs (fine)
- 1/2 - teaspoon paprika
- 1/4 - teaspoon salt
- 1/4 - teaspoon dried oregano
- 1/4 - teaspoon ground red pepper
- 6 - lean (4-ounces each) boneless pork
loin chops
- 1/4 - cup all-purpose flour
- 1/2 - cup nonfat buttermilk
- Vegetable cooking spray
Directions:
- In a blender or food processor, add
pecans, breadcrumbs, paprika, salt, oregano, and red
pepper.
- Process until pecans fre finely
chopped.
- Dredge pork chops in flour. Dip
in buttermilk, and dredge in pecan mixture. Cover and chill 1
hour.
Preheat oven to 425 F. Coast
rack with cooking spray.
- Arrange pork on rack and place in a
9x13-inch pan.
- Coat pork evenly with cooking spray.
- Bake for 15 minutes. Turn pork,
and coat evenly with cooking spray.
- Bake 5 minutes or until done.
