Cajun Pecan Pork
Makes 6 servings

Prep Time: 15 min.
Chilling Time: 1 hr.
Baking Time: 20 min.

Ingredients:

  • 1/2 - cup pecan halves (toasted)
  • 1/2 - cup dry breadcrumbs (fine)
  • 1/2 - teaspoon paprika
  • 1/4 - teaspoon salt
  • 1/4 - teaspoon dried oregano
  • 1/4 - teaspoon ground red pepper
  • 6 - lean (4-ounces each) boneless pork loin chops
  • 1/4 - cup all-purpose flour
  • 1/2 - cup nonfat buttermilk
  • Vegetable cooking spray

Directions:

  1. In a blender or food processor, add pecans, breadcrumbs, paprika, salt, oregano, and red pepper.  
  2. Process until pecans fre finely chopped.
  3. Dredge pork chops in flour.  Dip in buttermilk, and dredge in pecan mixture.  Cover and chill 1 hour.

Preheat oven to 425 F.  Coast rack with cooking spray.

  1. Arrange pork on rack and place in a 9x13-inch pan.  
  2. Coat pork evenly with cooking spray.
  3. Bake for 15 minutes.  Turn pork, and coat evenly with cooking spray.  
  4. Bake 5 minutes or until done.
