Lime & Peanut Salad Dressing
Makes 1 cup

Prep Time: 10 min.

Ingredients:

  • 1/2 - cup lime juice
  • 4 - garlic cloves (minced)
  • 3 - Tablespoons sugar
  • 2 - Tablespoons unsalted roasted peanuts (finely chopped)
  • 1 - Tablespoon fresh ginger (minced)
  • 1 - Tablespoon fresh cilantro (chopped)
  • 2 - Tablespoon fish sauce

Directions:

  1. In a medium bowl, stir together lime juice, garlic, sugar, peanuts, ginger, cilantro, and fish sauce.
  2. You can serve dressing over mixed salad greens or assorted fresh vegetables.
