Turkey Fajita (Slow Cooker) Wrap

Cooking Time: HIGH for 4 hrs.
Ingredients:
- 3 - turkey tenderloins (about 2
pounds)
- 1 - envelope (1-1/2-ounce) taco
seasoning
- 1 - celery rib (chopped)
- 1 - onion (chopped)
- 1 - can (12-1/2-ounce) mild diced
tomato and green chiles (undrained)
- 1 - cup (4-ounces) reduced-fat
shredded Cheddar cheese
- 8 - flour (7-1/2-inch) tortillas
- Toppings: shredded lettuce, light sour
cream, sliced olives, chopped tomato
Directions:
- Cut turkey into 2-1/2-inch strips.
Place in a heavy-duty zip-top plastic bag.
- Add taco seasoning. Seal and shake
to coat.
- In a 2-1/2-quart slow cooker, place
turkey, celery, and onion.
- Stir in the diced tomato and green
chiles.
- Cover and cook on HIGH for 4
hours.
- Stir in cheese.
- Warm tortillas. Spoon turkey
fajitas in center of each tortilla.
- Top with desired toppings and roll up.
