Gazpacho

This chilled tomato soup is a classic - and chock full of healthy garden-fresh vegetables.

Soup, Stew, and Chowder Recipes from AlansKitchen.comMakes: 4 servings (1-1/4 cups)

Ingredients:

  •    3 medium tomatoes, peeled, chopped
  • 1/2 cup cucumber, seeded, chopped
  • 1/2 cup green pepper, chopped
  •    2 green onions, sliced
  •    2 cup low-sodium vegetable juice cocktail
  •    1 Tablespoon lemon juice
  • 1/2 teaspoon basil, dried
  • 1/4 teaspoon hot pepper sauce
  •    1 clove garlic, minced

Directions:

1) In large mixing bowl, combine tomatoes, cucumber, green pepper, green onions, vegetable fruit cocktail, lemon juice, basil, hot pepper sauce, and garlic.

2) Cover and chill in the refrigerator for several hours.

Each serving provides:
