Mushroom and Swiss Cheese Salad

Makes 4 servings
Prep Time: 15 min.

Ingredients:

  • 2 - Tablespoons olive or vegetable oil
  • 2 - Tablespoons tarragon red wine vinegar*
  • 1 - teaspoon Dijon mustard
  • 1/4 - teaspoon garlic salt
  • 1/4 - teaspoon coarse ground black pepper
  • 1 - jar (4.5-ounces) Sliced Mushrooms, drained
  • 1 - medium head red leaf lettuce, separated into leaves
  • 2 - slices (1-ounces) Swiss cheese, cut into narrow strips
  • 1 - Tablespoon shelled roasted sunflower seeds

Directions:

  1. In a medium bowl, combine oil, vinegar, mustard, garlic salt and pepper.
  2. Beat well with wire whisk.
  3. Add mushrooms and toss to coat.
  4. Arrange lettuce leaves on individual salad plates.
  5. Top with half of the cheese strips.
  6. Spoon mushroom mixture over cheese and top with remaining cheese.
  7. Sprinkle with sunflower seeds.
