Catalina Beef Pot Roast

Makes 4 to 6 servingsRecipes from AlansKitchen.com

Prep Time 15 min.
Baking Time: 2 to 3 hrs.

Ingredients:

  • 1 - bottle (8-oz.) Catalina salad dressing, divided

  • 3 - pounds beef pot roast

  • 66 to 8 - carrots, peeled and diced

  • 6 to 8 - potatoes, peeled and diced

  • 1 - onion, quartered

  • 1 - jar (12-oz.) olives with pimentos

Directions:

Preheat oven to 350.

  1. Heat 1/4 cup dressing in an oven-safe pan over medium heat. Add roast to pan: heat and turn until all sided are browned.

  2. Add carrots, potatoes, and onion to pan.  Pour remaining dressing over all; top with olives and olive juice.

  3. Cover and bake for 2 to 3 hours or to desired doneness.
