Good and Quick Beef Stroganoff

Ingredients

  • 1-1/2 - cups uncooked bow tie pasta

  • 1 - pound beef top sirloin steak

  • Salt (to taste)
    Pepper (to taste)

  • 2 - teaspoons vegetable oil

  • 1/2 - pounds mushrooms, cut into 1/2-inch slices

  • 1/3 - cup coarsely chopped onion

  • 1 to 2 - Tablespoons all purpose flour

  • 3/4 - cup beef broth

  • 1 - Tablespoon sliced green onion

  • 1/4 - cup light sour cream

Directions

Cook pasta according to package directions. Keep warm.

Trim fat from beef and cut into 1/2-inch cubes. Spray large nonstick skillet with vegetable cooking spray.

  1. You want to heat your skillet over medium-high heat until hot. 

  2. Add half of the beef and stir-fry for 1 to 2 minutes or until outside surface is no longer pink. 

  3. Now, season the beef with salt and pepper. 

  4. Remove from skillet and keep warm. 

  5. Repeat with remaining beef.

  6. In same skillet, add in the oil. 

  7. Cook the mushrooms and onion for 2 minutes or until tender. 

  8. Stir in flour. 

  9. Gradually add broth, stirring until blended. 

  10. Bring to a boil. 

  11. Cook and stir 2 minutes. 

  12. Return beef to skillet and heat through.

  13. Serve beef mixture over pasta. 

  14. Sprinkle with green onion and serve with a dollop of sour cream on top.
