Cocoa and Curry Rubbed Chicken Breast

Prep Time: 15 min
Baking Time: 25 min.

Ingredients:

  • 6  heaping teaspoons Cocoa Curry Spice Mix (recipe below)
  • 1  Tablespoon canola oil
  • 6  (5 oz. each) boneless, skinless chicken breasts

Directions:

Preheat oven to 350-degrees F.  Grease baking sheet.  Prepare Cocoa Curry Spice Mix.

  1. Rub chicken breasts with canola oil.

  2. Sprinkle 1 heaping teaspoon cocoa curry mixture over each chicken breast.

  3. Place coated chicken on prepared baking sheet.

  4. Bake for 20 to 25 minutes or until juices are clear.

  5. Let chicken cool before serving for a cool dish or serve hot as part of a hot meal.

Cocoa Curry Spice Mix

Ingredients:

  •       2  Tablespoons ground cumin
  •       2  Tablespoons curry powder
  •       1  teaspoon salt
  •       1  teaspoon ground black pepper
  • 1 1/2 Tablespoons Cocoa

Directions:

  1. In a medium bowl, stir cumin, curry powder, salt, pepper and Cocoa.

  2. Store covered, in cool dry place.
