Cocoa-Coffee Spiced Chicken with Salsa Mole

Baking Time: 25 min.

Ingredients:

  • 2  Tablespoons ground coffee beans
  • 2  Tablespoons Cocoa
  • 1  Tablespoon salt
  • 1  Tablespoon packed light brown sugar
  • 1  teaspoon chili powder
  • 1  Tablespoon vegetable oil
  • 4  boneless, skinless chicken breasts
  •     Salsa Mole (recipe below)
  •     Cilantro sprigs(optional)
  •     Black beans(optional)
  •     Rice(optional)

Directions:

Preheat oven to 425-degrees F. Grease baking sheet.

  1. In a mixing bowl, stir together coffee beans, cocoa, salt, brown sugar and chili powder.

  2. Rub chicken pieces with vegetable oil; pat on cocoa mixture.

  3. Place coated chicken pieces on prepared baking sheet.

  4. Bake for 20 to 25 minutes or until juices are clear.

  5. Meanwhile, prepare Salsa Mole.

  6. Arrange chicken and salsa on large platter. 

  7. Garnish with cilantro sprigs, if desired. 

  8. Serve with black beans and rice, if desired.

Salsa Mole

Ingredients:

  •    2  tomatoes, chopped
  •    1  avocado, peeled and diced
  •    1  green onion, minced
  •    1  Tablespoon snipped cilantro
  •    1  clove garlic, pressed
  • 1/4  cup Mini Chips Semi-Sweet Chocolate
  •    1  teaspoon lime juice

Directions:

  1. In a medium bowl, stir together tomatoes, avocado, onion, cilantro, garlic, small chocolate chips and lime juice.
